How do I convert my demos from DM_26 files to something I can watch outside of the game?

Open them in the demo editor (which you can launch from the launcher by changing a Setting in Settings) and export/render them from there.

For the details of doing that, here's a bunch of tutorials. It's probably in there.

I can't run jamme because of error 0xc000007b

Google the error code and possible solutions. It's a Windows error, so it's unrelated to jaMME itself.
