I think the usual price for a server is like 10-15 dolores haze a month or smth. bluefangsolutions is one of the server hosts I know. There are probably a few others out there.

Class restricted can actually be quite fun. So perhaps this could be some sort of event? I doubt someone will pay for a server to permanently run jedi vs sith only, but as an event its certainly possible.
